Happy Thursday y’all!  First and foremost, shout-out to my parents for finally getting around to reading my blog! Hi guys! *virtual hand wave*  Hope that reading my posts proves that I’m able to feed myself    While on the subject of the blog, I’ve thought about adding more posts that aren’t just recipes but recommendations on kitchen items, suggestions on what to purchase for your pantry and maybe even dedicated posts to food I consume when I travel or at note-worthy restaurants.  I was struggling with this idea because: A) I’m not an expert cook or a food critic with a refined and discerning palette like, oh say- Tom Sietsema.   B) I don’t want to deviate from sharing recipes that might come in handy to someone out there looking for an easy recipe, like me. Happy friday everyone!  I’m so glad the weekend’s almost here! You know how some weeks you just feel a bit… off your game?  I’m having one of those weeks for sure and for no reason in particular.  So this weekend I plan on recharging the ol’ batteries and it coincides with a trip to see my best friend in Canada!  So excited On to today’s recipe!   If you’re unfamiliar with chaat- it’s a type of Indian street-food that traditionally involves layering different types of spicy and sweet chutneys, fresh veggies like onions and tomatoes and on top of different vehicles ranging from samosas to small puris (crispy hollow puffed circles of dough).  There are hundreds of variations when it comes to chaat and people are still inventing new concepts! There are some vegetables I have made peace with never loving, like eggplant or sweet potatoes.   Beets were also part of this group, until very recently.  They always seemed a bit too (naturally) sugary for me.  Growing up, my mom used to make beets Indian style- sauteed with Indian spices, chili peppers and salt.  I just could not get myself to enjoy that and trust me I TRIED but the sweetness just got in the way.  Beets have amazing health benefits so I was a little bummed that I couldn’t get myself to love them. Thankfully I got into a morning smoothie regimen since last year and through that beets made a comeback.  They are amazing in smoothies!  Which makes sense since they have a little sweetness and go perfectly well with fruits.  But there are times when I have too many beets and mostly the kind that have beet greens attached to them.  So I thought- what else can I make with them that I won’t hate?  Thanks to a leftover box of orzo pasta, I had a brain wave: Why not make a faux …

Happy Spring Forward!!! Just kidding, this is probably the worst part of daylight savings.  I woke up this morning to my alarm feeling quite exhausted and realized it was because my internal clock was still an hour behind.  Yes, I’m one of those people who feels like even an hour of sleep is precious!  But on a happier note, it was a beautiful day out today!  I can’t remember the last time I was outside and felt like my jacket wasn’t necessary.  Very soon it’ll be down to cardigans and light jackets- can’t wait!!!!! On to today’s recipe!  Samosas!!!!!!  Who doesn’t love samosas?  Seriously if someone tells me they hate samosas, I will give them a weird look.  How can you not love a fried flaky dough filled with a spicy potato filling?  The only thing about samosas I’m not a fan of is how tedious they are to make at home.  I’ve actually failed at making samosas in the past because something went wrong with the dough and they were impossible to eat.  Perhaps if I attempt again …

Happy new year everyone!!!  I definitely paused with the blog unexpectedly due to the holiday season (clearly I’m still getting used to maintaining a blog religiously).  2014 was a wonderful year for me on so many levels and I hope 2015 will be even better!  What a great couple of months I’ve had with family, friends and travels!   But I’m not going to lie, part of me was looking forward to time after the holidays to get back into my old routine of healthy eating and working out.  I hope there comes a time when I can maintain the healthy-ness even during the holidays!   The first thing my husband and I wanted to eat after the holidays was: vegetables.  Literally our mantra on new year’s day was “MUST. EAT.
