Late last year, I had purchased a brand new electric pressure cooker for one main reason:  to cook chickpeas from scratch.  For one thing, I’m a little wary of eating canned foods on the regular.  No scientific reasoning behind this, but it was just a matter of eating fresh food as often as I could.   After I pressure cooked my first batch of chickpeas from scratch- I was hooked.  It was so much more affordable to buy dried beans in bulk and I don’t know if it’s a psychological thing but everything I make with freshly cooked chickpeas tastes so much better!   This hummus recipe was inspired by, well I should actually say the main reason I made this hummus was because I have a super sweet co-worker who grows a ton of vegetables and herbs and regularly brings me things from her garden.  This past week she gave me, no joke, a 13 gallon bag filled with mint.  I had mentioned to her that my local grocery store has a weird shortage of mint i.e. they …

Ok.. do I even need to go there? Maybe a little so I can feel better: it’s summer + I’ve traveled every weekend + I have had MANY MANY fails lately.   Phew, that felt better  On to today’s post! So this recipe might raise a lot of eyebrows of the seasoned dosa chefs, but what I was after was a quick dosa recipe that did not require fermentation or waiting for the batter to be done overnight.  I have never made a traditional dosa and the batter-making process seems pretty intimidating.  Luckily I found this recipe, authentic or not, and it was pretty darn delicious and QUICK.  Most dosas are made with a combination of rice, lentils and dal.  But this one uses just uses rice and shredded coconut.  So for those days where you’re really craving dosa and don’t want to go through the pains of fermenting and what not- this one will do the trick šŸ˜‰  The chutney recipe I found is equally quick and suuuuuper delicious!  Perhaps the only “catch” in this …

“I’m aliiiiiiiivvvvvvveeeee!!!”, says I while imitating Frankenstein.  My facebook page tells me it’s been 22 days since I last posted.  Wow that’s kind of crazy, because in my head it feels much shorter than that.  In my defense, I spent one week being a total nerd- migrating site files from one host provider to another.  Don’t worry if you don’t understand this!  It’s just a lot of technical gobbeldygook.  Then I had this no big deal trip to Iceland-   Instead of writing a looooooong post on how amazing Iceland is (which it SO is), I hope the photos I chose for the slideshow above can showcase the amazingness. Hello hello!  I’m happy to report that my batteries are completely recharged and I’m back feeling quite excited to cook again.  Not that I wasn’t cooking before, but I was struggling on the “what do I share on the blog!?!” front!  Sometimes I forget that the blog isn’t meant to be a stressful thing I HAVE to keep up with.  I just love cooking and trying new recipes out. Happy friday everyone!  I’m so glad the weekend’s almost here! You know how some weeks you just feel a bit… off your game?  I’m having one of those weeks for sure and for no reason in particular.  So this weekend I plan on recharging the ol’ batteries and it coincides with a trip to see my best friend in Canada!  So excited On to today’s recipe!   If you’re unfamiliar with chaat- it’s a type of Indian street-food that traditionally involves layering different types of spicy and sweet chutneys, fresh veggies like onions and tomatoes and on top of different vehicles ranging from samosas to small puris (crispy hollow puffed circles of dough).  There are hundreds of variations when it comes to chaat and people are still inventing new concepts! Today’s recipe was originally inspired by the whole palak chaat craze.  Palak chaat has been a phenomenon, particularly in DC thanks to Rasika (one of the most sought after Indian restaurants in the area).  I’m not remotely obsessed with Rasika, I’ve only been there three times since I moved to …

Hello hello! Hope everyone had a wonderful weekend/start to the week! I had a particularly spectacular weekend celebrating our first wedding anniversary! It’s so hard to believe that a little over a year ago, I was in a completely different state of mind, re: wedding planning chaos mode. It’s funny how that happens right? You spend a whole year obsessing over little details and just like that, in a blink of an eye, the big day is over. What a wonderful day it was though! I would totally re-live just that one amazing day again Suril planned our celebratory trip this past weekend (which is now turning into a yearly pilgrimage) to Charlottesville, Virginia. We stayed at Arcady Vineyard Bed & Breakfast, a quaint b&b surrounded by nature and a stone’s throw from Monticello.  Our hosts were terrific and the breakfast they made for us everyday was top notch!
